Strawberry Shortcake Protein Waffles

6 large eggs
2 cups 2% cottage cheese
11/2 cups old-fashioned oats
2 scoops Muscle Pharm Combat Vanilla Protein Powder
1 teaspoon vanilla extract
1/2 teaspoon kosher salt
Sliced strawberries
Maple syrup

1. Process eggs, cottage cheese, oats, protein powder, and salt in blender until smooth.
2. Pre-heat a waffle iron to medium-high heat. Lightly grease with nonstick spray.
3. Pour a scant 1/2 cup of the egg mixture into the waffle iron. Close and cook until golden brown and crisp, about 4 to 5 minutes. Serve warm topped with strawberries and maple syrup.

Waffles freeze great and are perfect for meal prep and on the go breakfast. Cool completely and store in a zip top bag in the freezer up to 1 month. Simply heat in a toaster oven until warm.
